This is a traditional austrian delicacy. May have some luxembourg touch...
Ingredients (for 1 person)
- Flour: 125g
- Eggs: 1
- Milk: 160mL (approx)
- Vanillated Sugar: 8g (1 packet)
- Sugar: small spoon
- Salt: pinch
- Rhum: 1 spoon (or equivalent rhum flavor)
- Sparkling Water
- Butter: 30g
- Raisins: 35g
- powder sugar
- Prunes or Prune compote
Howto dough:
- Separate egg yolg and white in 2 bowls
- beat the egg white into snow, you can add a spoon of water to get more
- mix the yolk in the second bowl with milk, sugar, vannilated sugar, salt, rhum
- add some* sparkling water water
- add flour until it all become thick but still fluid
- lift the whites under the dough
Howto Kaiserschmarrn:
- Heat pan to around 7/10
- Put butter in pan, yes it's quite some...
- pour dough into pan to make a thick flat pancake
- grab raisins and throw them well distributed into the stuff. If consistency is right, they will sink
- bake quite well until underside is brown
- turn the whole over to the other side (yeah, have fun with that, maybe cut in 2 before)
- tear the pancake into pieces and continue baking
- when it's all brown, your are done. If it starts smelling burned, you are over time
Howto eat:
- Serve on a plate
- Put powdered sugar on top
- warm prunes or prune compote on the side
